Jalapeno Witch Fingers & Spooky Sausage Balls


Jalapeno Witch Fingers

Ingredients:
12 fresh jalapeno peppers, halved lengthwise and cleaned of seeds (use gloves!)
1 red bell pepper
1 - 8 oz package of cream cheese, softened
2 cups shredded cheddar cheese
spices to taste: garlic powder, onion powder, paprika, cayenne pepper
1 cup breadcrumbs
salsa, for serving

Directions:
Halve and clean jalapenos carefully.
Mix together cream cheese, shredded cheese and spices.
Fill jalapeno peppers with cheese mixture.
Roll stuffed peppers in bread crumbs.
Cut the red bell pepper into mini-triangles for witch nails and press into the narrow end of the jalapeno.
Cook at 350 for 30 minutes on a greased metal sheet pan.
Serve with "bloody" salsa.

Spooky Sausage Balls

Direction:
Combine 3 cups of all-purpose baking mix (I used Bisquick), 1 lb ground hot pork sausage, and 1 - 8oz block of cheddar cheese, shredded, into a large bowl until blended.  Shape sausage mixture into small balls and place on lightly greased baking sheet.  Press 1 pimiento-stuffed Spanish olive deeply into the center of each ball.  Bake at 400 for 15-18 minutes or until lightly browned.
